3.1) antioxidant effect
L-Ergothioneine is a naturally occurring amino acid of plant origin that accumulates in animals, and studies have demonstrated that it acts as an antioxidant.

3.2) Protective effect on cells
Ergothioneine is a powerful hypochlorite scavenger (HOCl), and while many compounds can react with hypochlorite, few can react as quickly as ergothioneine. One of the effects of ergothioneine is to protect red blood cells from neutrophils from normal functioning or diseased inflammatory sites.

3.3) Anti-inflammatory effects
Peroxynitrite is formed endogenously by the limited diffusion reaction of NO and superoxide and is a potent oxidant associated with the pathophysiology of inflammatory conditions such as ischaemia-reperfusion injury, atherosclerosis, acute pneumonia and sepsis. Ergothioneine inhibits peroxynitrite anion-mediated oxidation of amino acids, such as complexine nitration, thus providing therapeutic feasibility for inflammation.

It has strong antioxidant activity: scavenging reactive oxygen species, chelating divalent metal ions, activating antioxidant enzymes, inhibiting superoxide dismutase, and inhibiting oxidation of various haemoglobin proteins. Due to these properties of ergothioneine, it has a wide range of applications and market prospects in the fields of medicine, food and beverage, functional food, animal feed, cosmetics and biotechnology.
